As the original creation of chef Ethan Stowell, who has gone on to launch three other restaurants (Tavolata, How to Cook a Wolf, Anchovies & Olives), Union is the most elegant and refined---and also the only one that takes reservations. The beautiful, multi-level modern dining room is both urban and romantic. The menu changes daily and transforms the best of Northwest ingredients into truly memorable meals. You can order à la carte, but the best way to experience Union is through its eight-course tasting menu (be forewarned, portions are tiny). Your meal might begin with the amuse-bouche, a few tiny, ambrosial spoonfuls of the kitchen's twist on vichyssoise. A pas de deux of Canadian oysters may follow, nestled on a bed of crushed ice and chased by a rich cold beet soup. For mains, ahi is properly seared, and the fat layer of roast duck beautifully crisped. Enjoy a cheese interlude enhanced by a glass of Dow's Vintage 1985 port. For a finale, choose pineapple-banana sorbet and a chocolate-filled profiterole. Union's wine list has breadth, offering numerous by-the-glass choices. Enjoy the topnotch service---unstuffy, warm, and some of the best in town.
