Standard cuts like filet mignon, ribeye, strips and porterhouse steaks are grilled to perfection, but its the more inventive offerings that stand out. Try the mustard filet, broiled with a whole grain mustard sauce and served with poblano pepper mashed potatoes, or the Sake Beef, with tenderloin medallions and shitake mushrooms simmered in a sake reduction. If youre adventurous, try the red deer venison chops pan-roasted with mushrooms or the stuffed wild boar chops, filled with spinach and mozzarella in a Madeira sauce. If youre a seafood lover, have the sesame-crusted snapper Hemingway, topped with lump crabmeat and citrus essence, or the potato-crusted redfish, pan-seared and served in a garlic, chive and bianco sauce. Vallones excels in classic finishing touches like the lemon brûlée torte, with fresh fruit and berry coulis, or the blackberry crostada, with an old-fashioned Italian pastry.
