 Vernona has done something that few other hotel restaurants have managed. Indeed, most cutting-edge independent restaurants would be humbled by its commitment to locally farmed, organic produce, meats and cheeses. The vibrant and seasonally changing menu emphasizes health and the therapeutic properties of organic foods. Sounds pious, no? Never fear. The dining room, with its graceful arched windows, floral murals and Italian-villa vibe, plays dramatic host to dishes like Barolo-braised beef short ribs with Yukon Gold mashed potatoes, local organic romano beans and bordelaise sauce. To accompany the menu's healthy focus, the wine list has a broad array of organic wines and a laudable collection of half bottles. For a luxury hotel restaurant, the 175 wine offerings also span a commendable range of price points, from a very sensible $38 to more than $1,000. It’s luxurious, topnotch dining with attentive and sophisticated service---the hefty price tag made sweeter by a selection of house-made truffles and chocolate fripperies.
