Vivace Restaurant Review: Vivace is the Italian word for "alive" and the glorious views from the restaurant of the sun setting over the grounds of the Park Hyatt Aviara Resort, Batiquitos Lagoon, Carlsbad's rolling hills and the Pacific will make diners glad they're alive. We recommend the huge patio, weather permitting, but the sophisticated wood-paneled, stone-tile-floored dining room offers floor-to-ceiling windows. Start with the artful burrata in caprese that features little dots of formed balsamic "caviar" or the sweet corn agnolotti; chef Jesse A. Paul's seasonal menu of contemporary Italian cuisine features organic pastas made fresh daily on-site. The lobster risotto, made with carnaroli rice, Parmigiano-Reggiano and Thai basil, is cooked to toothy satisfaction. For heartier appetites, there are steaks and seafood, including a satisfying branzino with mussels, calamari, shrimp, oven-dried tomatoes and olives. The huge, rustic pork chop, from pigs fed a special hazelnut diet, is moist and flavorful. Surprisingly, the wine list leans more towards California than Italy, while the cocktail list includes a refreshing sage blueberry lemonade. Save room for a creative dessert, including a chocolate polenta cake and Nutella torta, or enjoy a cheese plate. Although the setting is quite romantic, there is a children's menu.
