Rumored to be the most expensive restaurant ever to open in Dallas, Voltaire is sleekly subdued, with clean-cut lines and extravaganzas only in things like the costly collection of crystal sculptures. A hip crowd flocks to the bar, but we prefer the quieter tables, maybe next to the outdoor waterfall of the interior fireplace. First: take note of the wine list, impressive in its own right. The sommelier, Darryl Beeson, will easily steer you to a choice, regardless of your budget. Next, notice the very small menu, and understand that its small for a reason---each item has been perfected. Classic French items like honey duck confit and sautéed foie gras share menu space with contemporary dishes like wasabi-laced crabcakes with a mango fruit relish. Both the roasted sea bass and the sautéed beef tenderloin (served, bien sûr, topped with foie gras) are proven favorites.
