Dining room at West, Vancouver, canadaSit at the cherry wood-and-marble bar opposite the ceiling-high “wall of wine." Look up and glimpse a reflection of diners’ plates in the wavy sculpture above. The menu might feature first courses of a quail duo (ravioli and roasted breast) and a tian of Dungeness crab and couscous with North African influences. Mains are inventive, and can include a smoked sablefish en papillote with pomme purée and dashi-style broth and pine mushrooms from the woods of Vancouver, saké-braised Berkshire pork cheeks with Victoria plum purée, and a quick-seared peanut and sesame-crusted ahi with poached lobster and lettuce “farci.” There are three eclectic five- and seven-course tasting menus with wine pairings focused around top seasonal ingredients. Ceviche spot prawns tucked into a barely poached ravioli, and Queen Charlotte halibut with a watercress potato salad, clams and mussels might sing an ode to spring. Another option, the West, is a seven-course sequence of classics such as foie gras scented with vanilla Earl Grey tea and biodynamic aged risotto. There is also a vegetarian tasting. Pastry chef Rhonda Viani’s chocolate tasting stars a chocolate praline millefeuille. An early (before 6 p.m.) prix-fixe menu is a steal at $55. The wine list focusing on boutique wineries (both old- and new-world) and seldom-found varietals complements the cuisine. Service is seamless.

While traveling in Vancouver last week we dined at West for a special occasion dinner and were very pleased. We had the Seafood Tasting Menu and the West Tasting Menu with the wine pairings and everything was absolutely delicious. Our favorites were theYUZU MARINATED VANCOUVER ISLAND OCTOPUS, BIODYNAMIC AGED RISOTTO WITH SPOT PRAWNS and TORTELLINI OF THIESSEN FARM QUAIL. My boyfriend doesnt eat shellfish and they were very accommodating of substituting out dishes for him. The ambiance in the restaurant is very comfortable (open and airy) and the service is very good. Our server was a bit on the reserved side but otherwise pleasant and helpful. The food is pricey but well worth it. Plan to spend a couple of hours indulging!

I was expecting much from West, based on the awards etc they have won, and was disappointed. The food was mediocre. Visually pleasing, but ultimately, and I hate to use the word, bland. The chicken/kalamata olive starter was tasteless, while the sablefish ravioli was reasonable at best.The Salmon main meal was undercooked with barely any flavour, while the beef was easily the best dish of the night. Desserts were average at best. Won't return.
As for the service, there is a fine line between good and excellent service. I really dont need 4 different servers, 10 times at a sitting. At times it felt intrusive. Definitely won't return and do not understand what all the fuss is about.
