Find your way to Wild Rocket to experience this smart dining outpost by lawyer-turned-chef Willin Low, located at the Hangout Hotel atop the serene Mount Emily Hill. Humble local ingredients get a gourmet upgrade by chef Low, who creates Singaporean-influenced modern European cuisine he calls "Mod Sin." Come with a curious appetite and a willingness to open your mind and palate to this East-West mélange that includes roast potato soup with blue cheese-century egg fritters, the latter a quintessentially Chinese taste. Give a shot at Low’s laksa pesto linguine with white prawns and quail eggs and the quirky dish that combines a confit of “chai po” (salted chopped radish) atop a well-roasted Chilean sea bass with local-style congee on the side. We order the Ibérico pork char siew with Shanghai greens and quinoa every time and are never disappointed with its flavorful Spanish-Chinese interface. Wild Rocket has a wine list of over 60 labels, 40 percent of which are old-world. Desserts, also fusion-style, divide between those that just don't work as a final sweet treat, like the too-quirky osmanthus flower Champagne jelly and rice wine granita, while others, like the warmed dark lava chocolate gâteau, end the night just right.
