 Wolfgang Puck American Grille is really two restaurants. The first faces onto the Borgata gaming floor. It is bright and jazzy with a lively bar scene to match. The menu is casual and creative with items such as truffled potato chips with Maytag blue cheese and chives and a Prime burger with onion marmalade, Vermont cheddar, mayo and house-made pickles. The other American Grille, behind the casual restaurant’s partitions, is in a handsome dining room, elegant and almost regal in its stark modernity. Serious cooking happens under the supervision of executive chef Aram Mardigian. The menu offerings taste as good as their descriptions read. Become a believer and order the roasted beet and goat cheese napoleon with toasted hazelnuts, citrus vinaigrette, and aged balsamic vinegar or an inspired regional entrée of pan-roasted Atlantic swordfish “aqua pazza,” which means it is served in a spicy shellfish broth, along with Maryland crab, shrimp, clams, preserved lemon and some fragrant basil for accent. When you are ready for dessert, try the Pink Lady apple tart with almond cream, a Calvados glaze and scoop of rich caramel swirl ice cream. The service team is well trained, and that includes the wine servers who oversee the extensive wine list.
