 Aged Prime beef and wild game dishes take center stage at this restaurant named for the Y.O. Ranch. Meats are seasoned with herbs and spices, charred on a flat top griddle and then seared with a “secret” finishing sauce. The result is a particularly tender, flavorful cut of meat. Appetizers include wild boar sausage on red sauerkraut and crab cakes served with a Dijon-horseradish rémoulade. The Y.O. Ranch specialty is the buffalo filet mignon, but we especially like the New York strip char-crusted with wasabi butter. Finish up with the Jack Daniels chocolate pecan pie.
