Yusho’s 250-seat environment features exposed brick walls, natural wood surfaces, stained concrete floors and warm-hued upholstery. Tables strategically placed around the open kitchen provide guests a front row view of the culinary action and robata grill, while the outdoor patio overlooks the Vegas Strip. The menu is a representation of Japanese street food, with several creative shareable items, such as the unconventional chicken wings roasted for 12 hours and stuffed with thigh meat; duck leg cured in pink Himalayan salt and basted in Moroccan plum barbecue sauce; and charred octopus prepared with a yuzu sauce, egg yolk and enoki mushrooms. Among noodle options is Logan Poser Ramen --- robust soup loaded with bacon stock, bonito flakes, braised crispy pork and a slow-roasted egg that adds a burst of richness when mixed in. Accompaniments include more than 50 sakés, a dozen Japanese craft beers, and a selection of six draught cocktails made in-house and kegged, such as the Chuhai composed of distilled saké, jasmine tea and citrus. A sweet finishing touch is the soft serve coffee ice cream with Fernet caramel, nori and pop rocks.
