Solar Eclipse Cocktail Recipe | April 8, 2024

On Monday April 8, 2024, there will be a total solar eclipse crossing North America, passing over parts of Mexico, the United States and Canada. It will begin in Sinaloa, Mexico. The path will then go over Texas and will be crossing fifteen states before moving on to Canada.

To celebrate this special event Cameron Mitchell Restaurants have created a celestial cocktail appropriately named the Eclipse Gimlet. It is a one-day only drink and will be served with viewing glasses.

It is available at some of their restaurants in Columbus, Ohio (Cap City, The Guild House, Hudson 29, Marcella’s Polaris, Molly Woo’s and Valentina’s). But if you cannot get there, you can try your hand at making it at home with the following recipe.

– 1 1⁄2 oz. Hendrick’s Gin
– 1 oz. simple syrup
– 1 oz. lime juice
– 4-5 cucumber wheels, approx. 1/8” thickness

• Combine lime juice, simple syrup, and thin cucumber wheels in the small side of mixing tin
• Muddle 3-5 times
• Add Hendrick’s Gin to mixing tin
• Fill large side of mixing tin 80% with ice, shake vigorously for 15-20 seconds
• Strain over fresh ice into service glass
• Garnish with “Cucumber Eclipse

Cucumber Eclipse” Garnish Procedure
– Cut cucumber into approx. 1⁄4” to 1⁄2” wheels
– Using round cookie cutter, cut out seeds to make a “Solar Eclipse” garnish
– Place under damp paper towel
– Refrigerate until service
