Brought to you by Steven Duong, who has given the New York dining scene Vietnamese-flavored restaurants Tet, Nam and Cyclo, this modest Chelsea eatery is a sleeper hit. Tucked away on Ninth Avenue, the restaurant serves no-frills fare that is nicely executed: a crispy calamari, greaseless and lightly breaded, comes with a spicy tamarind sauce. Caramelized, unctuous pork belly is very good, but even better is the caramelized chicken, which subtly tickles the taste buds with cinnamon; both come in the clay pot they were cooked in and are satisfying on a chilly night. The restaurant’s name refers to the ladies who serve food from carts on the streets of cities like Saigon and Hanoi, which means Co Ba also offers several versions of the banh mi sandwich: spicy beef, vegetable, and the classic that bypasses pâté for more pork. The drink selection includes affordable wines and bottles of Vietnamese beer.
