The interpretive Spanish décor---think bright earth tones and modernist fixtures---is the perfect backdrop for celebrity chef Bobby Flay's equally interpretive Spanish-style food. Flay uses Spanish ingredients---olives, capers, pecans, chorizo, preserved lemons---but forsakes heavy, pork-laden preparations. The result is a lighter style of American cuisine that is suited to a New York audience. Expect such inventive dishes as striped bass with artichokes, black olives, haricots verts and a lemon confit sauce; or caramelized chicken with roasted orange and lemon honey and crushed olive oil potatoes. Desserts have their own whimsy, and there's a well-priced selection of Spanish and American wines, plus sangría by the glass or the pitcher.
