Fifteen years ago, this restaurant was a boring hotel annex with stuffy décor and an unknown young chef in the kitchen. That young chef is now culinary superstar Jean-Georges Vongerichten, known the world over as simply Jean-Georges. Happily the pompadour frills at Quantum 56 have given way to ultramodern blond wood, polished metal and shining glass. The food served in this sophisticated, modern room is also new: contemporary American that borrows at will from international cuisines. For starters, there are roasted sea scallops and terrine de foie gras, and for the main course such entrées as grilled marinated squab with truffle bread pudding, butternut squash and foie gras sauce; orecchiette with broccoli rabe, cauliflower, eggplant, sweet currants and Pecorino Romano; and a seafood hot pot of clams, mussels, lobster, Gulf shrimp and market fish in a white wine saffron stew. Desserts include vanilla Mascarpone shortcake and chilled pineapple consommé.
