Seven Hills is one of the oldest and most highly regarded wineries in Washington's Walla Walla Valley. Founder Casey McClellan first planted the winery's estate in the early 1980's with his father, a third generation farmer, and has become one of the state's leading winemakers. He is best known for his Bordeaux varietal red wines, including Cabernet Sauvignon and Merlot. But McClellan is also an innovator, experimenting with some of Walla Walla's first Malbec and Tempranillo as well as Viognier, Riesling and Petit Verdot. The 2008 Viognier offers the distinctive varietal aromas of wildflowers and stone fruit. Lower in alcohol than many California Viogniers (grown in warmer climates), the Seven Hills offers subtlety and freshness on the palate. Its flavors are of white peaches, honeysuckle and tangerines with just a hint of licorice and minerality on the finish. A faintly spicy note makes the wine a great partner for Asian food, particularly fresh, Thai spring rolls, white fish dishes and stir-fry with a touch of spice. A wine brimming with the flavors of early summer, it will also pair well with picnic foods like cold, roast chicken, German potato salad and grilled peaches.
