THIS ESTABLISHMENT HAS CLOSED BUT MICHAEL MINA, WHO BEGAN HIS SAN FRANCISCO RESTAURANT CAREER AT AQUA, HAS NOW RELOCATED HIS EPONYMOUS RESTAURANT TO THIS ADDRESS Since 1991, Aqua has been a bastion of San Francisco power dining where execs make big decisions while eating small portions of fantastically prepared, sparklingly fresh seafood. The calm, beautiful space has salmon-colored walls, a long, curved bar and stunning, larger-than-life floral arrangements. Seafood is the focus here, with young executive chef Jason Pringle at the stoves. A seven-course tasting menu (for the entire table), with the option of sommelier-chosen wine pairing, and an à la carte menu are available for dinner. À la carte appetizers may include hamachi with watermelon, basil and lime, octopus terrine, or confit of foie gras. Entrées range from bacon-wrapped Maine lobster to petrale sole with potato risotto to ahi with truffle pommes Anna, radish and shimigi vinaigrette. Desserts are divine and very French, such as the raspberry soufflé. Aqua offers a notable international wine list.
