Named after Giordano Bruno, who went up against the Vatican in the 16th century to challenge church doctrine and was burned at the stake, this East Village pizzeria isn’t exactly going against pizza doctrine, but it is doing some experimental stuff. Even the standard margherita comes with fermented tomatoes and is sprinkled with herbs, something that pizzaioli in Naples would be up in arms about. The summer greens pizza is topped with carrot pesto, ricotta and noodlefish, and boasts a bold and complex flavor profile. Among the few pasta dishes are bucatini with corn, squash blossoms and scallion. It doesn’t sound very promising until you try it: each ingredient brings something unique to the palate. Cavatappi with bone marrow and clams is satisfying on many levels.
