André Terrail took the helm after the death of his nearly legendary father Claude in 2006. The menu is still composed of the celebrated specialties of this well-established institution, such as pike dumplings and canard au sang. Philippe Labbé, former chef of L'Abeille and L'Arnsbourg, succeeds Laurent Delarbre in the kitchen. The wine cellar is fabled, with thousands of pricey bottles and a few affordable ones, too. À la carte prices are stuck in the stratosphere, but even this monument with all its history has to bow to the times, so the luncheon menu is priced at €105.
