: Caché, a quintessentially Southern California version of a French bistro, is a venture of Mélisse chef-owner Josiah Citrin who has installed young Nyesha Arrington, an alumna of Mélisse and Joël Robuchon's Las Vegas properties, as his chef de cuisine. The fare combines French standards with lighter contemporary concepts, and the restaurant has become a popular happy hour destination. Starters from the market-driven menu include wood-fired calamari with chorizo and Meyer lemon, roasted prawn with a spirited habanero vinaigrette, intriguing flatbreads, and a selection of Mason jars filled with treats like foie gras parfait or eggplant tapenade. Among entrées are Scottish salmon with capers, raisins and pine nuts in verjus, and a rib-eye with porcini butter and green peppercorn sauce. Linger over a lemon tart or mocha pot de crème, or drain a bottle of Châteauneuf (from a smart, global list) with a plate of artisanal cheeses. True to its California heritage, the restaurant’s design is a versatile indoor-outdoor concept, with an intimate candlelit dining room transitioning to an outdoor patio complete with a bar and chic red couches warmed by a fire box.
