Carl Marletti Restaurant Review

: Located on Square Saint-Médard is the stylish, contemporary bakery of Carl Marletti, where one of the city’s most creative pâtissiers is continuing to refine his craft. His specialties include addictive éclairs, individual fruit tarts, millefeuilles with novel appearances, religieuses with pistachio or rose-flavored pastry cream, and shiny domes filled with chocolate mousse. A silver leaf-topped version of a mont blanc looks nothing like the traditional pastry and incorporates a more elegantly piped chestnut cream. He turns out excellent macarons in both classic and modern flavors, and his verrines --- various sweet concoctions (e.g. pistachio-raspberry, three colors of chocolate) layered into a petite glass --- are rapidly becoming a Paris favorite.
