Carmine’s has mastered the formula for a crowd-pleasing Italian eatery: lotsa pasta with heavy sauces at very low prices, served in Central Casting’s idea of an Italian restaurant. The food arrives at table on sharing platters for four or more, prepared by a kitchen on auto-pilot. Chances are you know the menu: spaghetti and meatballs, chicken Parmigiana, lasagna, etc. There are a few dishes not seen on every Southern Italian menu in the Western Hemisphere such as chicken scarpariello wings or the four pasta platter. This outpost (there are Carmine’s in New York City and the Bahamas) is reminiscent of the others with pictures of Italian heroes---Sinatra, Marciano, et al---on the walls and dark paneling throughout. Hard to understand why it’s so popular when there are real “little Italian” restaurants with better food throughout the Garden State.
