CAVA Restaurant Review: CAVA’s poolside setting, with its fleet of colorful umbrellas and veil of perpetual sunshine, is quite beautiful. Located on the grounds of the Renaissance Indian Wells Resort & Spa, the restaurant has a relaxed vibe, with an all-day dining, farm-to-fork experience. The breakfast buffet features hot and cold items, including made-to-order omelets, smoked salmon, griddled favorites topped with date crystal butter procured from nearby Shields Date Garden, fresh fruit and more. Self-serve juicers allow guests to create their own custom blends of healthy beverages using a crop of seasonal vegetables and fruit. The light yogurt parfait is a pool of organic honey layered with Greek yogurt and fresh Temecula berries. Lunch includes an array of burgers, sandwiches and salads, including the BLTC wedge featuring a blend of jumbo lump crab, bacon, tomato and lettuce tossed in a traditional Louie dressing. Evenings give way to heartier fare, including tender herb-roasted chicken accompanied by root vegetables and mashed potatoes. The adjoining dining rooms, which are lofty and modern, are nice backdrops, but it’s the poolside tables that offer the most photogenic setting. Here, grazers can live large as they sip from a thoughtful selection of wines or peruse the menu of handcrafted cocktails.
