Dining room at Chateau Marmont Restaurant, West Hollywood, CA

If you are able to infiltrate the restaurant's phone lines and then gain entry past the intimidating gentleman guarding the door---it won't be a problem if your name is George (Clooney) or Angelina (Jolie)---you will find one of L.A.'s most spectacular outdoor terraces. There is also a tiny indoor dining room at the legendary Château Marmont, but you should really insist on settling in under the palm trees, with the gothic arches of the colonnade in the background. A New Yorker reigns in the kitchen, chef Carolynn Spence, who now loves her life on the West Coast. Spence has put together a somewhat classical California menu with appetizers like crab cakes with avocado purée and pickled red onion, crispy calamari with roasted tomato and pepper concassé, black truffle risotto, beef carpaccio with English mustard aïoli, and goat cheese bruschetta with beets and pistachios. Entrées come in large portions and there is a daily special. Try the diver scallops with tarragon cream, spaghetti bolognese, potato-crusted halibut or the lamb osso buco on a bed of French green lentils for a savory course. The chèvre cheesecake is an interesting finish, unless you ask Spence to send you her special raspberry and rose sorbet; more traditional are the banana split sundae or the bittersweet chocolate pudding. The wine list carries more labels from France than Italy and California, the only three areas represented here.
