Crabtree's Kittle House Restaurant Review

: Crabtree’s Kittle House is a Westchester institution --- elegant but not pretentious, formal but not outdated. Owner John Crabtree has a loyal following of local celebrities and happy regulars who frequent any one of his many dining rooms, or perhaps the ultra-private 16-seat table adjacent to a wine cellar: 67,000 bottles from all over the world and an array of just under 6,000 labels. First courses feature a light white bean and roasted garlic velouté with crispy kale and pancetta foam, and a Japanese twist on an Italian pizzetta with big eye tuna sushi on a sushi rice cake topped with flying fish roe, jalapeño and spicy Japanese aïoli. Main courses feature complex, well-executed fare like hearty 72-hour slow-braised beef short ribs on a bed of aged Vermont cheddar grits, roasted pearl onions and asparagus in a red wine sauce, and a flaky line-caught sustainable Loch Duart Scottish salmon with fennel, sweet dried tomatoes, lemon confit and cauliflower purée. Desserts may include a trio of Bosc pear, raspberry and passion fruit sorbets. The Tap Room is a more dressed-down, copper-ceilinged dining alternative that serves upscale takes on bar favorites ranging from a Wagyu hot dog with beer-batter onion rings to burgers made with meat from butcher Pat LaFrieda.
