: Dr. Bob is Robert. W. Small, Ph.D., professor at the Collins School of Hospitality Management at Cal Poly Pomona, and Wine Chairman of the Los Angeles County Fair’s prestigious annual wine competition. But, as he proves here, he’s got a way with ice cream, too. This casual little spot is in downtown Upland, with bales of hay out front and only a handful of tables. Flavors vary almost daily, and are all personally created and handcrafted by Small. Typical flavors might include Mississippi mud pie, pistachio, pure vanilla, chocolate malt, cinnamon, cherry jubilee and others reflecting the availability of seasonal ingredients. The most popular offering is Twyla’s Rubble, a cream-based combination of toffee, hazelnut and chocolate bits. His ice creams and yogurts are made from fresh, quality ingredients and are devoid of fillers, preservatives or unnecessary air-volume.
