Henri Faugero hails from the Corrèze countryside, where a man is judged by his work, not his pretensions. This modest, even self-effacing chef doesn’t go in for bold experiments, but he knows how to use an uncommon spice, or mustard, or vinegar to give traditional dishes a pungent, modern zest. Faugeron pays tribute to his rustic roots with seasonal variations on cèpes and truffles, with tender veal shank heightened with a piquant touch of Brive’s violet mustard or a beef daube braised à l’ancienne for a full ten hours and served with truffled pasta. A pastoral apple flognarde is a final flourish to be savored along with the last drops of a great Bordeaux, Burgundy, or more modest Chinon or Sancerre.
