: The concept sounds dubious on paper---throwing seasoned meats and cheeses on top of french fries---but Erik Cho’s gourmet creations are some of the most irresistible dishes found in LA. He starts with hand-cut Kennebec fries cooked to a golden hue in canola oil that is later used to fuel the truck itself. The rajas fries is our favorite, a mélange of tender and flavorful shwarma-marinated steak, fire-roasted poblano chilies, caramelized onions, jack cheese and fresh cilantro. Another winner is the kimchi fries, a zesty combo of kimchi and Kurobuta pork belly, onions and cheddar cheese. Chili cheese fries are tweaked with Angus beef chili made with beer and chocolate. And some of the sweet potato fries are also mean contenders, especially the ones topped with free-range chicken, cashews and a tomatillo-tamarind sauce.
