Chef and restaurateur Guy Savoy turned an unpromising site (a former bank) into a fashionable restaurant with a star-studded clientele. The keys to his success are a clever contemporary décor, a swift and stylish staff, and---best of all---an ever-changing roster of irresistible dishes: succulent langoustine salad with diced tomato and candied lime zest, salmon marinated in fresh coriander and mint, filet of rascasse (scorpion fish) accompanied by saffron-infused vegetables and the suprême de pintade (guinea fowl), served with parsleyed potatoes and two celeries. Lots of luscious desserts, especially the astonishing apple tart. Prix-fixe menu: €32. A la carte: count on €42.
