 This offshoot of Michel Troisgros, who owns a top restaurant not far from Lyon in Roanne, takes place in the dining room of the Hôtel Lancaster, located on a side street just off the Champs-Elysées. The space is comfortable and dimly lit, decorated with Japanese prints. In summer, don’t miss the quiet courtyard, enlivened by the rustling of leaves. It’s quite amusing the way dishes are presented on the menu---by taste sensations: zesty for lemon and citrus fruits, green for vegetables, pungent for condiments, sour for dairy products, and so on. Julien Roucheteau, in tandem with Troisgros, delivers sophisticated and light courses, crafted with top-quality products. Expect to be delighted by treats such as the mezzaluna of chopped tomatoes and black truffle in a consommé broth and the grilled calf sweetbread set off by an olive and verjus grape sauce. Desserts are tinged with exoticism, like the mango and pineapple millefeuille or the pistachio dim sum in a tasty strawberry juice. To match this fare, there’s an exhaustive wine list and discreet yet efficient service.
