Medicinal properties are ascribed to the bubbling cauldrons of soup in the middle of every table. Choose mild or tongue-searingly spicy broth or a combo of both, and then check off meats, vegetables and other additions from a printed checklist. Thin sheets of lamb cook instantly in the boiling soup, swimming with hawthorn berries, galangal root and other fragrant herbs. Extras like shiitake mushrooms and meatballs help flavor the broth. Continue the lamb theme with hearty lamb dumplings or lamb fried rice, or vary the flavors with savory green onion pancakes and spicy pork wontons.
