Start out with Tabasco fried pickles, house-made pimento cheese or a deviled egg plate, old-school style. Dry-rubbed St. Louis-style ribs are slow smoked for six hours and finished on the grill; we also suggest the very tender beef brisket or the smoked beer-can chicken. Large combo plates supply a taste of the works in one meal. For a twist, try something of the “Mexicue” list --- pulled pork or smoked chicken mixed with tacos, quesadillas and more.
