A sleek, contemporary space with bold colors celebrates the ancient Mauryan Dynasty with a traditional northern Indian cuisine laced with occasional modern accents. Other regions of the subcontinent, including chef J.K. Paul's native Bombay, are also represented. All spices are ground fresh daily and the menu features a wealth of intriguing dishes showcasing lamb, seafood, chicken and vegetables. Starters include spinach-and-corn samosas; and chicken drumsticks stuffed with dried fruit and cottage cheese, then barbecued in the tandoor oven. Among entrées, you'll find sea bass curry with fenugreek and garlic; a vegetarian curry in velvety cashew sauce; tandoori lamb chops; and chicken cooked in a traditional kadhai (an iron wok) with tomatoes, fenugreek and cilantro. Beverages range from traditional yogurt drinks like rose-scented or mango lassi to a list of California wines.
