The Chong brothers --- Fernando, Roberto and Marcelino --- emigrated from Peru in 1975 with some interesting ideas about Chinese fusion cuisine, culled from their heritage and from their imaginations. "Chef Robert," as he’s known, deftly applies traditional Chinese cooking methods to non-traditional ingredients like butter, cheese and new-world fruits and vegetables. Interesting dim sum starters include lamb spare ribs in a plum-sesame glaze, crab cakes topped with tomatillo-pineapple salsa, and Kobe-style beef tartare with Chinese mustard sauce. "Drunken" chicken is marinated in saké and served with sweet crispy onions, while butterfish (a cousin to Chilean sea bass) comes in a yuzu-miso butter sauce. Grand plates include Shanghai-style lobster with ginger and curry, as well as Korean-style rib-eye with truffled artichoke and potato hash. For dessert, consider the decidedly non-Chinese apple tart with passion fruit compote or coconut flan. The wine list lends itself to successful pairings.
