First comes success. Then comes expansion, followed by a restaurant empire, and lots of money. Finally, the next step, is usually a decline in the quality of food. This is the general formula we’ve seen again and again with successful chefs. David Burke, who runs a handful of establishments in New York and around the western hemisphere, has, so far, avoided that last misstep. And his eponymous restaurant in The James hotel is no exception. The menu is loaded with a lot of Burke extravaganzas: peanut butter-stuffed, bacon-wrapped dates; potted duck and foie gras in a jar; roast carrot hummus in a jar (the latter two feel a lot like baby food). For the big boys, there’s an above-average rib-eye and an especially good (charred on the outside, sticky on the inside) grilled octopus. Desserts can be inventive and if you only try one, order the satisfying caramel brownie ice cream sandwich (complete with chocolate-covered potato chips). Wine is pricey (both by the bottle and glass) but the many house cocktails are a good bet.
