Salvadoran cooking is among the most interesting of all Latin cuisines, and Salpicón is one of the best places in the Inland Empire to experience it. Tucked into a nondescript shopping center just off the freeway, Salpicón’s dining room turns out to be a cheerful, family-friendly space with boldly colored Central American folk art lining the walls. At most tables, customers chase pupusas with ensalada, a refreshing pineapple-and-apple punch, or other tropical fruit beverages. The pupusas --- cornmeal patties stuffed with cheese and/or meats, seafood or vegetables --- are a Salvadoran staple and arrive at the table with curtido, a spicy cabbage relish. Varieties include mushroom-cheese, crab-cheese, pork, beans and loroco (a native Salvadoran flower). The extensive menu also features whole deep-fried tilapia, shrimp in garlic sauce, and salpicón, a shredded beef dish. For dessert, regulars like the sugar-dusted plantain fritters or quesadilla Salvadoreña, a pound cake similar to Mexican pan dulce.
