Among the more rewarding choices are a Brie-and-cream-cheese dip enriched with crabmeat and zesty seasonings, peppery fried oysters and an earthily satisfying gumbo of smoked duck and okra. When it comes to main dishes, gilding the lily is the kitchens biggest sin. Salt and cayenne are doled out in excessive amounts, so its best to opt for the simplicity of a competently seared filet mignon or grilled fish, which might be salmon, tuna or the days catch. Desserts, such as a bread pudding weighted down with fruits, are the products of an overactive imagination.
