The kitchen’s frame of mind runs to putting creative twists on New Orleans ingredients and seasonings, sometimes to good effect, but just as often not. Among the more rewarding choices are a Brie-and-cream-cheese dip enriched with crabmeat and zesty seasonings, peppery fried oysters and an earthily satisfying gumbo of smoked duck and okra. When it comes to main dishes, gilding the lily is the kitchen’s biggest sin. Salt and cayenne are doled out in excessive amounts, so it’s best to opt for the simplicity of a competently seared filet mignon or grilled fish, which might be salmon, tuna or the day’s catch. Desserts, such as a bread pudding weighted down with fruits, are the products of an overactive imagination.
