At Palikao in downtown LA, diners can build their own bowls of couscous, a North African staple dish that chef/owner Lionel Pigeard grew up eating in Paris. (The restaurant is named after his grandmother's hometown in Algeria.) Choose a grain (classic semolina, quinoa, cauliflower rice, etc.), protein (beef meatballs, lamb merguez, chicken, tofu), vegetables, toppings (chickpeas, raisins, pine nuts, herbs) and broth (mild, spicy or "spiiicy" with extra harissa). Gluten-free and vegan options are also available.
