: This reincarnation of chef Phillip Frankland Lee’s former Beverly Hills tasting bar concept sits on the second floor of Encino Place. Enter and find a bustling open kitchen surrounding a roaring wood fireplace, creating its own little world apart. Lee is charming and personable; he visibly enjoys visiting each table to recommend his favorite limited-production California wines (Thacher, Vino V, Juicy Villages) or local drafts from Poseidon Brewery. Inventive, nuanced American dishes fall under snacks/vegetables, seafood and meat and are available à la carte. But really it’s better to travel through tasting menus, which run $40/$80/$120, according to appetite. This landscape of flavors changes dramatically, from a silky mussel shooter with unfiltered saké, uni and avocado to grilled chermoula-marinated prawns with crunchy pistachios. Escolar with sunchokes and sweetbreads sits atop an amaranth purée. Eleven busy chefs do a kitchen ballet around the hot coals of the grill, delivering garlicky roast oysters with firm, sweet meat and squid roe, or tender sliced Prime hanger steak. Splurging brings the reward of a luxe foie gras with uni and red caviar on brioche crisps. Finish with tangy triple-cream house-made cheese, or charred vanilla ice cream with apple cobbler.
