Trés, a restaurant in the lobby of the SLS at Beverly Hills, features the cuisine of chef José Andrés, whose other restaurants have made the SLS a major foodie destination. In this Philippe Starck-designed sanctuary that blends warmth, sophistication and whimsy, Andrés offers some traditional Spanish dishes along with his more innovative molecular gastronomical creations. Dishes might include watermelon and feta salad, jamón Ibérico (a prized Spanish cured ham) and chicken croquetas with a creamy texture attributed to béchamel sauce. Main courses include rotisserie chicken, Wagyu New York strip steak, and gnocchi with lobster and lobster “air.” For dessert, there’s a tres leches-lime soup with coconut sorbet. The wine selection is generous.
