SPARKLING Founded in 1734, Taittinger continues its legacy as one of France's premier producers with luxurious offerings like Nocturne, a "sec" (or sweet) Champagne blended from around 30 wines of various vineyards and vintages. Composed of 40 percent Chardonnay and 60 percent Pinot Noir and Pinot Meunier along with a healthy dosage of sugar cane, the wine is aged for four years in the historic cellars of the Abbey of Saint-Nicaise before disgorging, resulting in a smooth, round Champagne that pairs well with desserts and rich pâtés.
