A native Philadelphian, chef-owner Marc Vetri trained in Northern Italy, and the region's influence on his cooking results in thoroughly modernized spinoffs of classic regional dishes at one of the top Italian restaurants in the country. Vetri might also be the only chef who hosts twice weekly "degustazione" nights, in which he prepares a seasonal locavore tasting menu—and hand-paints a copy of it for each table!
