“I’m going to the truck to eat,” used to conjure up an image of a lunch truck pulling up to a construction site where blue-collar guys with less-than-refined palates would line up for burgers, burritos, and other easy-to-prepare fare. But today, these “roach coaches” have to pull over and make room for a new type of mobile dining experience: culinary cognoscenti from coast to coast waiting in line to order delicacies like grilled sweetbreads and truffled beef bourguignon from trucks. As kids, we would have a Pavlovian response to the Good Humor man as he rang his distinctive bell through the neighborhood; today, these vehicles use Twitter to tell people where they will appear to dole out desserts like warm chocolate bread pudding with bacon custard sauce. Appearances of these new “taco trucks,” some of which are eco-friendly, can become quite a scene, with diners turning on friends to the experience.
