Cavatina Restaurant Review

: Sunset Marquis has earned the status of a legendary hotel because of its luxurious suites and villas, spread in a lush vegetation off Sunset Boulevard, which have housed actors, rock stars, filmmakers, writers and high-end travelers since 1963. It was about time for the hotel to regain a restaurant to match its stature. Mission accomplished with Cavatina and its team, consulting chef/restaurateur Michael Schlow and executive chef Roger Eggleston. “Catavina” is a musical term originally meaning a short song of simple character, yet the cuisine produced by this pair has been given much thought and is quite elegantly presented --- you won’t want the meal to end. And even though the dining room had a very nice facelift, we strongly recommend patio seating. You’ll understand all of the above as soon as you’ve snacked on the sugar, citrus and curry glazed roasted Marcona almonds (we had to ask for more). Vodka-marinated Pacific Northwest raw salmon with pluots, sea beans and a splash of beet jus might well be one of the best looking plates you’ve ever seen. Burrata with caramelized figs seasoned by a rhubarb vinegar, the heirloom tomato gazpacho, and the grilled Spanish octopus will bring more joy to the table. When dipping your fork into the slow-cooked ocean trout, you’ll easily see that the kitchen has mastered cooking fishes. Meat lovers will be satisfied with the roasted loin of lamb served with ratatouille, cauliflower purée, pine nuts and cumin. Carrot cake with cream cheese ice cream and candied walnuts is not to be missed. Since you are so comfortably seated, take the time to peruse the extensive wine list with prices ranging from $36 (2008 Scholium Project “Lost Slough Vineyards” Central Coast) to $2,125 (2005 Château Mouton Rothschild). For lunch, try the bruschetta with crushed avocado, the chilled shrimp with yellow chile sauce or the signature cheeseburger.
