Churrascaria Plataforma is the place for meat. Servers parade around the dining room carrying skewers of it, stopping by each table to slice morsels directly onto diners' plates. You may have as much---or as little---as you wish of each. Roast suckling pig, top round of beef, flank steak, lamb, pork, salmon, spare ribs, turkey wrapped in bacon, chicken hearts and thighs---on and on it goes until guests stop the procession by turning up the red side of a small coaster on the table. Before the meat feast begins, guests are encouraged to sample from the copious salad bar with everything from hearts of palm to quail eggs, but beware of overindulging in the prelude to fully enjoy the meal. Such appetite-quashing adventures are usually accompanied by caipirinhas, Brazilian cocktails made with the sugar-cane spirit cachaca.
