Diablo Royale Restaurant Review: Diablo Royale is a playful take on the Mexican concept of the Devil as a merry prankster: The inferno-esque red glow behind the cozy bar area is one tip-off, as are the 666 printed on the waitstaff's shirts and the voodoo-themed bodega candles lining a rough-hewn counter. There are dozens of specialty tequilas and related cocktails (consider a pitcher of the spicy blood orange margaritas) as well as entrées such as shrimp ajillo (heads-on, grilled with dried chilies and fresh garlic); the pollo con Pipian, a pan-roasted half-chicken in pumpkin seed-tomatillo sauce; or adobo spare ribs braised with chile and Mexican honey. But the real stars of the show (besides hand-carved furnishings from a little town just outside Pueblo) are the wildly popular tacos, which are served in homemade tortillas stuffed with unusual combo fillings like atun (seared tuna with mâche and avocado crema); al pastor (roasted pork, pineapple chunks); or Baja-style beer-battered cod. |
