Fort Defiance Restaurant Review

: Fort Defiance poses a challenge to diners in terms of its location. That is, unless you already live in Red Hook, Brooklyn, a neighborhood that is lacking in public transportation. Then again, this circumstance actually makes the restaurant all the more charming. The cooking is a notch above the average neighborhood eatery, and it’s complemented by well-executed cocktails. Silky chicken liver pâté with toast, and a roasted beet salad with fresh fennel are good starters. So are the super fresh oysters, which are worth the trip alone. Braised pork tongue is accompanied by a horseradish-apple sauce that makes the dish shine, while grilled mackerel is paired with sunchokes and walnuts, adding an extra layer of flavor and a crunchy texture. Finish the meal with a slice of rich buttermilk pie.
