Down an inconspicuous staircase in the Sago Hotel and beyond a cluster of plush couches is a simple, handsome room with dramatic circular chandeliers, Edison bulb wall sconces and antique-inspired swirly wallpaper --- The John Lamb. Named after the New York City-born Artillery Colonel under George Washington in the Revolutionary War, the restaurant offers a menu that pays homage to all things local. Mikey Belasco, formerly of The Gilroy and The Grey Lady, uses North American spirits in his creative cocktails and house-made apple pie moonshine in his Johnny Appleseed, mixed with apple brandy, rye whiskey, apple bitters and a spritz of absinthe. Sip local beers and wines with sharable dishes like devils on horseback (bacon-wrapped Vermont blue cheese), roasted bone marrow, ricotta gnocchi and apricot pork wings. Southern fried chicken is served with luxuriously flaky homemade cheddar biscuits. Some dishes, like kung pao calamari, err on the heavy, greasy side, all the better for sharing.
