Frequented by many politicians, this spot has enjoyed a fine reputation since the eighties. The setting has been updated, with new fixtures, luminaries and carpets, and the stoves have been entrusted to Chiho Kanzaki, who trained with Mauro Colagreco at Mirazur in Menton. The credo here is to highlight “revisited bourgeoise cuisine,” namely asparagus fritter with béarnaise sauce and caviar, John Dory fillet with green peas purée, and apricots with sage and pistachio ice cream.
