THIS ESTABLISHMENT IS CLOSED Mi Cocina's dining room, on a quintessential West Village corner, is ablaze with vibrant colors that suggest the warmth of Mexico. There’s more space than in days past, as the restaurant has expanded to include a large dining room, garden and lounge. Still, the name is apt, as the regional cuisine feels highly personal. Don't expect platters of burritos or cheese-laden nachos, however; the food is much more refined than that. Appetizers include caracoles Tía Margot, a dish inspired by chef Jose Hurtado-Prud'homme's aunt: snails cooked in roasted tomato-garlic sauce with olives, capers, chile guero and white wine. Prud'homme draws on his grandmother's mole recipe for the chicken mole enchiladas, but the appealing spinach enchilada entrée with cream is all his own. Mi Cocina's menu boasts a selection of more than ten premium tequilas available in a margarita or for sipping with a Mexican coffee at meal's end.
