THIS ESTABLISHMENT IS CLOSED As in many Tokyo restaurants, you enter this basement restaurant down a landscaped stone path, past rocks and a semblance of a garden. If you order à la carte rather than the set dinners, the chef will know you're serious. His sushi and sashimi are excellent, and if you sit at the sushi bar and befriend him, you'll be in for a treat. Yakiniku, thin slices of beef broiled with garlic and ancho peppers, come tender and rare, and will remind you of tuna. Other must haves on the menu include: Fish teriyaki, the udon noodle dishes and chawan-mushi egg custard filled with tiny pieces of chicken, vegetables, shrimp and gingko nuts.
